Ravioli Caprese

Since I had off all day today (finally, first day off in 10 days!) I decided to cook Brice up a yummy dinner and try something I had never tried before, making ravioli! Yes, rolling out the dough, using the little ravioli cutter...etc. It's a lot harder than it looks! I made a MESS! I absolutely LOVE Giada DeLaurentiis, everything she cooks looks amazing. I thought I'd share the recipe with y'all! So here it is..



  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 cup very hot water


  • 3/4 cup whole milk ricotta
  • 1 egg
  • 1/2 cup finely shredded store-bought rotisserie chicken
  • 1/4 cup grated Parmesan
  • 2 tablespoons finely chopped fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper


  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons chopped fresh basil leaves
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper


For the dough:
In a large bowl combine the flour and the water. Using a wooden spoon, stir to combine into a large ball. Cover with plastic wrap and let sit for 10 minutes.

For the filling:
Combine all the ingredients in a medium bowl and stir to combine.
To form the ravioli, cut the dough into 4 evenly sized pieces. The dough should be slightly sticky. Add extra flour as necessary for rolling, but use only a little as necessary. Form each piece into a 2 by 6-inch rectangle. Recover the dough with the plastic wrap.
Lightly dust the work surface and a rolling pin. Working with 1 piece of dough at a time, roll the dough into a 4 by 19-inch rectangle. Place 9 rounded teaspoons of filling about 1-inch apart down the center of the dough. Fold the dough over the filling. Press down around the edges of each of the ravioli with your fingertips. Cut the ravioli into small squares and press down around the edges again with your fingertips to seal. Place the finished ravioli on a baking tray and continue forming the remaining ravioli.
Bring a large pot of salted water to a boil over high heat. Add half the ravioli and cook until the ravioli float stirring occasionally, about 3 to 4 minutes. Drain into a large bowl and cook the remaining ravioli.
Pour the olive oil over the cooked ravioli. Add the basil, lemon zest, salt, and pepper. Gently toss to coat and serve immediately.

I must admit that I had to go out to Bed Bath & Beyond and buy a rolling pin, yes, that's right... I didn't have one! Who doesn't have a rolling pin?  have all of these fancy gadgets, yet no basic rolling pin. So of course I had to then get a ravioli cutter, next thing you know I'm looking at every single kitchen gadget wishing I could get one of those little guns like they give you when you're creating a registry, and click everything I want for my birthday/Christmas! haha! I should invent that, Birthday/Christmas registries! While perusing,  I found this precious little pink flower pot scrubber, so I thought to myself "I really think I need this b/c pesto is so aggrivating to get out of my pots and I scrub and scrub forever..." yes that is a great excuse to buy this precious little gadget! (Let me also add, that last time I cooked a meal for Brice, he proceeded to take my potato scrubber and scrub pots with it! NO! I had to correct him!) He had fun washing dishes tonight with my cute little pink scrubber :) haha!

Self Tanner Crisis!

I've decided to give up on self tanner for a bit... it started getting the "fake" look. But now, I'm left with these splotches all over me b/c it's coming off in "pieces" I guess you would say. Does anyone have a remedy that can take it ALL off at once?! HELP!


Obsession with Pesto

I have a ridiculously crazy obsession for pesto. It doesn't matter what time of day, I could eat it. If you have it made already, it's a very quick meal! (which is sometimes a bad thing!) My favorite way to eat it is over bowtie pasta, but sometimes I mix it with a little bit of mayo on my sandwiches. My mom bought me two basil plants, so I've been waiting for them to grow up enough to make some pesto! I also needed THIS...

My grandma bought it for me, and I am so excited I want to cook something everyday! My  basil plants finally grew enough for me to make some pesto, they were so pretty I hated cutting them back! :(

The recipe my mom always uses is an Ina garten recipe, so that is what I used as well. Except I omitted the walnuts, I just didn't think they were necessary. Also, I only used 4 cloves of garlic and it was plenty garlicy! I think 9 might be a little much! So here's the recipe!

•1/4 cup walnuts
•1/4 cup pignolis (pine nuts)
•3 tablespoons chopped garlic (9 cloves)
•5 cups fresh basil leaves, packed
•1 teaspoon kosher salt
•1 teaspoon freshly ground black pepper
•1 1/2 cups good olive oil
•1 cup freshly grated Parmesan

Place the walnuts, pignolis, and garlic in the bowl of a food processor fitted with a steel blade. Process for 30 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Serve, or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

My favorite is boiling up some bowtie pasta then mixing some pesto into it... heaven!

I'll try to post as much as I can this week, work has me working extremely long hours so it is a little hard! On that note, I'd like to give a little shout out to my wonderful boyfriend for sneaking flowers and a sweet card into my apartment while I was at work... after a TOUGH day this is just what I needed! :)

Girl Beer! (kind of)

Sometimes when you've had a long day at work, and its 95-100 degrees outside nothing seems to feel better than a nice cold beer! Well, the other day at work one of my co workers told me about Strawberry (!!!) Harvest Lager by Abita. Abita is a craft beer brewed in Abita Springs, Louisiana. Apparently this Strawberry beer is only available around Mardi Gras, and usually sometime in April/May. So really, 2 months of the year. That is not long enough! So I ventured to the grocery store... I love trying new flavors of beer (Samuel Adams Cherry Wheat!!) Not to mention it just sounds so cute, "strawberry beer". So tonight I finally got to try some. It is very light and crisp... with just a hint of strawberry, so it isn't sweet or an overwhelming flavor. I call it girl beer, but I'm pretty sure guys will love it as well! (my 2 co workers are guys  and they are obsessed) Everyone needs to hurry hurry hurry to the store right now and get it before it is gone off the shelf! I got the last one in the refrigerated section at Publix, but I did see some that were not refrigerated. I also heard they are sold at Total Wine. I am so excited, yet sad at the same time! Why can't they make this year round!?

Holy Guacamole!

Yesterday was one of my favorite holidays, CINCO DE MAYO! I love it for many reasons, eating Mexican food, drinking margaritas, wearing silly sombreros, chips & queso, and just the excitement in general of Americans celebrating this "holiday" of Mexico. I've been to Mexico during Cinco de Mayo, and was astonished to see that they do not celebrate! I guess it's just another excuse for crazy Americans to drink and party. So yesterday my friends all had a fiesta, and my contribution was guacamole! When Marisa and I were on The Amazing Race we got sent to Acapulco when we were eliminated. (How horrible....) Gabby & Victor took care of us, and we all fell in love with Gabby's guacamole! We even had a contest one night to see who could make the best "guac sauce" as Marisa called it. Well, yay... WE WON! So last night I tried to remember everything that we had put in it. This is my recipe, it turned out amazing!

{Brooke's Guacamole}
•4 Hass Avocados
•Juice from 1 1/2 limes
•3 cloves of garlic, minced
•2 roma tomatoes, diced
•1/2 red onion, minced
•cilantro (to taste)
•salt (to taste)

Mix all of this together, chill & serve!

If there's one thing you must know about me, it's that I LOVE free stuff! I have only recently found out about how many fabulous giveaways there are on blogs.
