Today is the day!

I don't care how crazy she has been in the past, Britney will always be one of my favorites! Her music makes me want to dance and I can sing along to every word in my car {and in the privacy of my apartment... sorry neighbors if you can hear me!} Go buy Britney's cd NOW! I'm still debating whether I want to get it on iTunes or go to Target. I am one of those people that likes to have the actual cd in my hands so I can flip through all of the pictures and lyrics! I can hardly wait... 4:30 hurry up!! Sorry Dr. Oz you are getting the boot, this is going to be my new jam at the gym! woooo!

What I'm Loving Wednesday!

I think the picture speaks for itself. The new Chick fil A Banana Pudding Milkshake is to die for! My favorite part is the pieces of vanilla wafers that are mixed throughout. If you love banana pudding... this tastes EXACTLY like banana pudding! Who cares that it's 780 calories and 24 grams of fat... treat yourself and go buy one NOW!!!

Happy Birthday Brice!

Last week was Brice's birthday and over the course of the last week we have had several celebrations. I asked him what he wanted me to cook him for dinner on his birthday and he replied "Crab Cakes and Shrimp Fettuccine Alfredo" Of course I had to have something green added in the mix so I decided on roasted asparagus... can't go wrong with that!

I had never made crab cakes before, so I decided to scour foodnetwork.com for the most appealing recipe. I decided on Ina Garten's Crab Cakes, I have never had any of her recipes that I didn't LOVE! They came out amazing, however leave AMPLE time to prepare. We ended up eating dinner around 9 pm because it is a rather long process! Here is the recipe:

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3/4 cup small diced red onion (This took about 1/2 of a somewhat small onion)
  • 1 1/2 cups small diced celery (4 stalks)
  • 1/2 cup small diced red bell pepper (1 small pepper)
  • 1/2 cup small diced yellow bell pepper (1 small pepper)
  • 1/4 cup minced fresh flat-leaf parsley
  • 1 tablespoon capers, drained
  • 1/4 teaspoon hot pepper sauce (I used Texas Pete)
  • 1/2 teaspoon Worcestershire sauce
  • 1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 pound lump crabmeat, drained and picked to remove shells
  • 1/2 cup plain dry bread crumbs
  • 1/2 cup good mayonnaise (I used Duke's)
  • 2 teaspoons Dijon mustard
  • 2 extra-large eggs, lightly beaten
  • For frying
  • 4 tablespoons unsalted butter
  • 1/4 cup olive oil

Place the 2 tablespoons butter, 2 tablespoons oil, onion, celery, red and yellow bell peppers, parsley, capers, hot pepper sauce, Worcestershire sauce, crab boil seasoning, salt, and pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes.

before cooking...

after cooking...

Cool to room temperature. In a large bowl, break the lump crabmeat into small pieces and toss with the bread crumbs, mayonnaise, mustard, and eggs. Add the cooked mixture and mix well. Cover and chill in the refrigerator for 30 minutes.

mix it all up!!
Shape into bite-sized crab cakes. Heat the butter and olive oil for frying over medium heat in a large saute pan. Add the crab cakes and fry for 4 to 5 minutes on each side, until browned.

Drain on paper towels; keep them warm in a 250 degree oven and serve hot.

The only thing I'm going to do next time, is find a yummy sauce to drizzle over the top! This is a meal that I would recommend to prepare the night before, so the next day all you have to do is fry them.

Here's the rest of the meal... although the crab cakes seemed to steal the show!

We continued birthday celebrations by heading to Atlanta on Thursday so that we could celebrate St. Patrick's Day with his friends and have the rest of the weekend to spend with family. We had a yummy seafood dinner at Steamhouse Lounge. I loved how perfect the weather was, I remember looking at my watch at 11:30 pm and it was still 70* outside... perfect!!

After dinner we walked over to Whole World Theater for an improv comedy show. It was hilarious! If any of you are ever in the Atlanta area you definitely need to check it out! If you are in the Charleston area, check out Theater 99, same idea they just do things a little different. Brice and I went there last year on our 1 year anniversary and I had a blast!

We ended the night with champagne, cake, and present opening... before getting back home at 2 am! It's always a party with this family, and I love it! Can't wait for our beach trip this summer... I'm counting the days!

If I were a shoe...

If I were a shoe, or if there was a shoe out there with the name Brooke it would look exactly like this!

The Jimmy Choo Luna Champagne glitter peep toe. Only a measely $665.00... that's pocket change! pshhh I wish! The other night I stumbled upon this glorious piece of perfection and literally stared with  my mouth open for a full 5 minutes. I couldn't navigate away from the page! This shoe is simply amazing! Ohhh to be Carrie Bradshaw, I'm sure she would have these shoes!

Busy Week!!

Outside of my day job this week has been BUSY! I honestly cannot recall the last time I came straight home from work and stayed here!

Tuesday night we got a group together over at Mary's beach house for a Mardi Gras party! We had so much food. Mary cooked bbq shrimp with bread, potatoes, broccoli and each of us all brought a salad/dip. I had my first king cake as well and it was heavenly! Also, Amanda got the baby!! For those of you who do not know that tradition... whoever gets the piece of king cake with a little plastic naked baby in it has to buy the next king cake and throw the mardi gras party the next year! Get to planning Manda!!!

Last night I had my body pump class, followed by Brice cooking me dinner. He made me tuna noodle, his "college dinner staple". It's SO simple but so yummy! And it was the perfect amount to have for left overs at lunch today! I might even make more next week! Sorry I didn't take a picture of it... will do for next time!

So here we are... Thursday aka "kind of Friday" because I pretty much consider Friday the weekend already.  I've been spring cleaning my apartment ever since I got home from the gym earlier. Which was pre dinner time. And it's still not fully there yet! I still have to clean my bathroom - most likely a Sunday night project. Very proud of myself for cleaning out the corner of JUNK in my closet and getting organized. Moving right along...

Bachelorette Weekend in Hilton Head!

This weekend a group of 9 of us all headed down to Hilton Head Island, SC for a weekend of bachelorette festivities! The beautiful bachelorette?

haha this was obviously pretty late!
Here is a much better picture of the beautiful bride to be! {Although the above is my personal fav!}
We had a really great night Friday, staying inside catching up with each other, drinking champagne, playing Apples to Apples and eating LOTS of yummy food!

We gave Jenny a lingerie shower and then she presented us with some adorable t-shirts! They were coral, the color of our bridesmaids dresses and all had our nick names on the back. Of course, we all had to sport them for the entire day on Saturday!

We had several people say "what is this" well, clearly our shirts say "BACHELORETTE" on the front! haha and then it was "who is the bride?".... can y'all pick out which one is the bride? The one in WHITE!

We took a really nice long walk on the beach and then went to get some daquris at Pool Bar Jim's. I chose the banana coconut daquri! It was delicious!

Saturday night we went to dinner at Topside at The Quarterdeck

I love the sky in this photo!
Then danced the night away with our ring pops at the various bars in "the triangle".

We all had such an amazing weekend, and I realize more and more what wonderful friends I have! They are the BEST! I miss all of us being together like old times already and can't wait for our next venture together! Congratulations, Jen Jen! Can't wait for more of the festivites!

Pink & Green Thursday!

 With my friend Jenny's Bachelorette Party coming up this weekend, I can only think of one thing and that is BEACH WEAR. Although I live on the coast, the idea of going to another beach for the weekend makes it special. Also, next week is Spring Break {for those of you still in college} and that brings me to this week's Pink & Green Thursday theme!

The perfect beach tote! Pictured here in "Folkloric"

Pictured in "Hotty Pink Bloomers"

I hope everyone has a wonderful weekend!! Crossing my fingers for beautiful weather!

What I'm Loving Wednesday!

Well here we go...

{The color aqua}

Clearly I have a love for this color. New bedspread + workout top + nail polish. wow! And that's not even all of it!

Yes, I held the camera with my feet... possibly half monkey??
{pasta salad}

It's a great dish for lunch and I get my little bit of pasta! I just made this tri color tortellini with spinach, red peppers, feta, olives & capers. Can't wait for lunch tomorrow! It's nice having something yummy to look forward to!

{Talenti Gelato}

I've tried the Talenti Sea Salt Caramel, Double Dark Chocolate, and this week Publix had them buy one get one free. I chose the Cappuccino and Caramel Cookie Crunch! They have all been heavenly! I don't feel super guilty eating it like I do with ice cream. It's all made with fresh ingredients - love it when I can read the ingredient list and know what everything actually is!

The one pictured below is Lilly, however my mom is in the process of making me one! Hopefully I'll have it for this weekend?! They are super cute with shorts or as a bathing suit cover up. I can't wait to get mine!

{acrylic tumbler}

I love this cute acrylic tumbler with straw! You can purchase it from Swoozies, I wish we had a Swoozies here in Charleston! :( This is the perfect cup to carry a nice cold beverage around in the summertime! I'm pretty sure mine would be full of water or pink lemonade :) I also love Tervis tumblers... they're so great because they don't sweat! No coaster needed. Not to mention, they keep your drinks cold for a seriously long time!

And last but not least...

{Live the Sheen Dream}

It's Finally MARCH!

I can officially not feel weird for wearing springy clothes and flip flops now! I laid out by my parents pool Sunday, February 27. It was so strange realizing I was in a swimsuit and it was FEBRUARY. There are so many things that are wonderful about March! For one, I moved to Charleston a year ago this coming weekend and wrote my first blog post! {I actually wrote that right before I moved}. Boy, after reading that things sure have changed! {career wise!} They've changed for the good though, I'm MUCH happier where I am right now.

Also in March, is Brice's birthday! I've already bought his present this year {I'm ahead of the game - woo!} and I can't wait to give it to him in a few weeks! Also, let's not forget St.Patrick's Day! I thought I'd take a trip back through time and relive some memorable St. Patrick's Day celebrations!

St. Patty's Day 2006 - Savannah, GA

We got left on a street corner by our cab until 4 am!! :(

St. Patty's Day 2007 - Columbia, SC {Five Points}

St. Patty's 2008 - Columbia, SC {Five Points}

St. Patty's Day 2009 - Columbia, SC {Five Points}

St. Patty's 2010 - Sullivan's Island, SC

No clue what we will get into this year! I always enjoy decking myself out in green and drinking green beer if it's available! What do you like to do for St. Patty's Day?
